Minestrone Soup

I love soup and winter is the perfect time to make it.  Here is a recipe for Minestrone Soup.  I love broth so I make mine with a bit than you would normally get.  I don’t like cooked spinach so I don’t add any to my recipe.  If you like your soup thicker, double the canned beans and add Italian green beans to the veggie list.  If you want spinach, put it in about a half hour before you serve it.
